Ingredients

  • 3 cups shredded mozzarella cheese 170 g
  • 2 ounces cream cheese 30 g
  • 1 3/4 cups almond flour 96 g
  • 1 tbsp baking powder 4 g
  • 3 large eggs
  • 1 tbsp sesame seeds (optional topping)

Instructions

  • Preheat the oven
  • Melt the cheeses together
  • Mix the dough
  • Shape the buns
  • Bake until golden
  • Cool before serving

Notes

 
  1. Preheat the oven to 200°C / 400°F and line a baking tray with parchment paper.
  2. Add the shredded mozzarella and cream cheese to a microwave safe bowl and heat until melted and easy to stir.
  3. Mix the melted cheese until smooth and fully combined.
  4. Add the eggs and mix quickly so the dough stays even and does not turn lumpy.
  5. Add the almond flour and baking powder and mix until a soft dough forms.
  6. If the dough feels too sticky, let it rest briefly before shaping.
  7. Divide the dough into equal portions and shape into buns with slightly damp hands if needed.
  8. Place the buns on the prepared tray and leave a little space between each one.
  9. Sprinkle with sesame seeds if you want a classic bun look.
  10. Bake for about 12 to 15 minutes, or until the buns are golden on top and firm to the touch.
  11. Let the buns cool for a few minutes before slicing so they hold their shape better.
  12. Store leftovers in an airtight container and reheat briefly before serving for the best texture.
